Easy Pasta with Sausage and Radicchio! Made with either penne or cavatappi, filled with vegetables and a cream sauce! Ready in about 30 minutes!

This pasta is made with little maintenance with a lot of flavor! For the most part it’s a one pot meal, once you get your pasta cook!
I absolutely LOVE using ground pork sausage in recipes. I always keep it stocked in my refrigerator or freezer!
Some of my favorite sausage recipes:
Spicy Sausage Zucchini Pasta. This pasta is so easy to cook in less than 30 minutes! With a little kick by adding red pepper flakes, the whole family will love it!
Creamy Sausage and Tomato Pasta. This pasta couldn’t be simpler with just a few ingredients. It’s a fantastic Italian supper for any night of the week.
Puff Pastry Sausage Cheddar Pinwheels. These pinwheels make a great game day snack. Filled with sausage and cheese they’re great for dipping and so easy to make!
Sausage Vegetable Soup. This soup is easy to put together and is the best comfort food. Loaded with vegetables and sausage!
WHAT IS RADICCHIO?
If you are not familiar with radicchio it is a a leaf chicory. It can be quite bitter in taste but it does mellow a bit when you cook it. When it is sautéed with onions and sausage the aromatic flavors are so robust.
While we were in Italy we ate a lot of radicchio in the summertime. Sometimes as just a salad, but most of the time it was incorporated into the meal somehow. One of my favorites is in pasta, the second favorite would be on pizza. Oh it is so good!
HOW TO MAKE PASTA WITH SAUSAGE AND RADICCHIO?
INGREDIENTS:
- Pasta. For this one I used penne or cavatappi but any short noodle would work.
- Sausage. I love to use ground pork sausage but you can also use the bratwurst sausage with casings removed. It increases the flavor of the sausage!
- Radicchio. You can typically find this in any grocery store, if not use red cabbage.
- Peas. I love to use frozen peas, cooked. So easy and I always have it in my freezer.
- Heavy cream. This makes the sauce creamy and delicious!
- Optional toppings. Fresh parsley and Parmesan cheese which are never optional for me but you don’t have to use them.
DIRECTIONS:
- Cook pasta according to the package. Reserve ¼ cup pasta water.
- In the meantime, in a large skillet cook on medium heat the ground sausage. Remove from the pan and set aside.
- Add olive oil and onions. Sauté over medium heat until translucent. About 2-3 minutes.
- Add radicchio, sprinkle with salt. Sauté for 2-3 minutes till softened.
- Add sausage and peas in the saute pan.
- Pour in heavy cream and stir. Keep on low till pasta is ready.
- When pasta is done, drain and add to skillet. Stir well.
- Serve, sprinkle with parsley and cheese. ENJOY!
NOTES & STORAGE:
Notes: The cream sauce will thicken as the pasta and sauce cool. Reserve some of the pasta water if it thickens too much.
Storage: Place in airtight container for up to 3 days in the refrigerator. This can not be frozen due to the heavy cream in the sauce. If you leave it out, then you can freeze in storage container for 2 months.
