Are you the type who makes soups all year round or do you just make them in the winter time? We are all about soups all of the time!
Some of our go-to soups include homemade tomato soup or this instant pot broccoli cheddar soup! Both really easy to put together and have great flavor!
Why is this the best and easiest soup to make?
For one, there is little prep time for this soup. If you meal prep then you may already have diced onions and carrots in your fridge. If you don’t then it really takes no time at all to get them prepped.
- A LITTLE TIP! When you open a fresh onion to dice up, go ahead and dice the whole thing. Then save it in an air tight container in your refrigerator. This saves so much time in the kitchen when getting dinner prepped!
The key to any kind of soup is the seasoning! It’s a must! Always taste your base and adjust the seasonings to your likely. This something that is hard to mess up!
HOW TO MAKE SAUSAGE VEGETABLE SOUP
INGREDIENTS:
- Extra-Virgin Olive Oil. We keep this stocked to saute our veggies in. You can use butter as well.
- Vegetables. Carrots and onions adds great texture.
- Seasonings. Salt, dried basil, and dried oregano bumps up the impact of flavor in this sausage vegetable soup.
- Bratwurst. We just really love the flavor for the bratwurst but you can use pork sausage as well.
- Potatoes. One of the start ingredients. We love using the little potato creamer potatoes. No need to wash them. Just cut and toss in the soup.
- Water and better than bouillon (vegetable flavor).
- Tomato sauce. Gives this vegetable soup a nice tomato base. I’ve made it before without it and honestly, it’s just not as good!
- Toppings. Parmesan shavings and fresh parsley
DIRECTIONS:
- Using a large pot, saute on medium heat onion in olive oil till translucent about 2-3 minutes. Add carrots, basil, and oregano. Saute for 2-3 minutes.
- Add sausage and brown, breaking it into pieces as you go. About 3-5 minutes.
- Add potatoes. Saute for 2-3 minutes.
- Add water, bouillon and tomato sauce.
- Bring to a boil about 3-4 minutes.
- Reduce heat and let it simmer for 15 minutes or until potatoes are softened.
- Top with parmesan shavings and parsley.

Sausage Vegetable Soup

Ingredients
- 1 cup diced yellow onion
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon salt
- 2-3 carrots peeled and sliced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 8 oz bratwurst casings removed (about 2 brats)
- 1 pound little potatoes halved
- 5 cups hot water
- ยฝ teaspoon better than bouillon vegetable flavor
- 8 ounces unsalted tomato sauce
- optional Top with parmesan shavings and fresh parsley (dried can be used)
