HOW TO MAKE SLOPPY JOE PASTA CASSEROLE
Ingredients:
- Extra-virgin olive oil. My favorite oil to cook with!
- Lean ground beef. We always try to use lean ground beef because there won’t be a lot of excess fat from the beef and you won’t have to drain it.
- Onion. I prefer white onion for most of my dishes but you can use yellow as well.
- Garlic. I use jarred minced garlic in olive oil and keep it stocked well in my pantry. Comes in handy and it’s one less thing that I have to chop!
- Yellow mustard. I used regular mustard and it helps offset the sweetness of the sugar.
- Unsalted tomato paste. This gives you the tomato base of the casserole.
- Brown sugar. You only need a touch, this will add a little sweetness to the dish.
- Cavatappi. My favorite kind of pasta. You can use any short noodle that you want.
- Heavy cream. Makes the pasta creamy!
- White cheddar cheese. Please shred your own cheese! It’s so much better than pre-shredded cheese.
- Breadcrumb. This gives a nice crunchy topping to the sloppy joe pasta casserole. You can use plain or Italian seasoning bread crumbs.
Directions:
- Cook pasta according to package.
- In a large oven proof skillet over medium heat, add olive oil; once hot, add the beef, cook for 5 minutes, stirring occasionally. Add chopped onion and garlic and cook for another 5 minutes until the onion has softened. Reduce heat to low.
- Add the mustard, tomato paste, and brown sugar, stir.
- Add the cooked pasta, heavy cream, and ¾ cup of cheese, mix gently until everything is well combined and the cheese has melted.
- Top with breadcrumb and the rest of the cheese.
- Place in the oven under broil for 5 minutes.
- Serve immediately.
