Cake mix cookies are genius! Can I just say, this was the first time I had tasted them or made them and I am so glad I did.
They definitely tasted differently then I thought they would. As my children described these strawberry chocolate cake mix cookies tasted like macaroons. I totally agree with them!
Slightly crispy texture on the outside, soft and chewy on the inside.
How To Make Strawberry Chocolate Cake Mix Cookies
INGREDIENTS:
- 1 (15.25 oz) box of strawberry cake mix
- 2 large eggs
- ⅓ cup vegetable oil
- 2 ½ cup milk chocolate chips (divided)
DIRECTIONS:
- Preheat oven to 350F. Line two cookie sheets with parchment paper and set aside.
- In a large bowl combine cake mix, eggs, and vegetable oil.
- Add ½ cup of chocolate chips until incorporated.
- Scoop cookie dough onto prepared cookie sheets using a small scoop leaving at least 1 ½” between scoops.
- Bake cookies for 10-12 minutes or until edges start to turn golden brown. Allow cookies to cool on cookie sheets for 2-3 minutes then transfer to a wire rack to finish cooling.
- Allow cookies to cool on cookie sheets for 2-3 minutes then transfer to a wire rack to finish cooling.
- Once cookies have cooled, line a cookie tray with parchment paper and set aside.
- Melt the remaining 1 cup of chocolate chips by microwaving in 30 second increments until smooth. Dip cooled cookies into melted chocolate covering ½ of the cookie. Place dipped cookies on the parchment lined cookie sheet and allow chocolate to set. Repeat with remaining 1 cup chocolate chips.
