Well, I couldn’t let this moment pass us by without celebrating. Today is 8 years I first hit publish on The Bitter Side of Sweet! Can you believe it? It seems like it has been a life time and then it seems like it was just yesterday.
I feel like I have learned so many things about blogging, photography and cooking that I never knew I could possibly learn, but most importantly I’ve made lots amazing recipes that I have gotten to share with you!

First recipe post ever were these snickers cupcakes!
Year one was my number post on the blog sea foam salad!
Second year, was my first giveaway I did on the blog!
Third year, was chocolate crinkle cookies! Yum!
Fourth year, was cranberry cheesecake brownies! These are SO GOOD!
Fifth year, was leftover turkey pot pies made with puff pastry!
Sixth year, was cranberry apple walnut tarts!
Seventh year was spicy roasted rosemary potatoes! The perfect side dish for any meal!
HOW TO MAKE FUNFETTI MINI BUNDT CAKES!
Ingredients:
- 1 cup all-purpose flour
- baking powder
- baking soda
- sugar
- salt
- 1 egg
- plain non-fat greek yogurt
- milk
- unsalted butter, melted
- vanilla extract
- rainbow sprinkles
FOR THE GLAZE: - confectioners’ sugar
- milk
- vanilla extract
sprinkles
Directions:
- Preheat the oven to 350ยฐ F. Spray a mini bundt cake pan with non-stick cooking spray. Set pan aside.
- In large bowl whisk together flour, baking power, baking soda, salt and sugar. Set aside.
- In medium bowl, whisk together milk, yogurt and eggs. Stir in melted butter and vanilla. Whisk till combined.
- Pour wet ingredients into dry ingredients. Slowly stir till combined.
- Fold in sprinkles. Avoid over stirring,
- Spoon mixture into mini bundt pan.
- Bake for 20-25 minutes or until edge are golden. Remove from oven, leave cakes to cool in pan for 5 minutes.
- Remove cakes from pan and allow to completely cool on wire rack.
- In a medium bowl add milk. confectioners’ sugar, and vanilla. Whisk till smooth.
- Pour over cakes. Top with sprinkles.
- Serve and ENJOY!
*A few notes! Made sure to let your cakes cool a few minutes before removing them from the cake pan. For your glaze if it is too runny add a little more confectioners’ sugar back in and stir. If it is too thick add a little milk and stir.
