So I don’t know how you feel about mug cakes but I love them! They are so easy and quick to make!
You can pretty much make any version you want!
A few months ago I made this along with some other recipes for Easter Sweets Week!
If you didn’t get to see my first recipe it was this Malted Chocolate Chip Skillet Cookie!

HOW TO MAKE CARROT CAKE MUG CAKE
Ingredient:
- Wet ingredients: butter, milk, vanilla.
- Egg yolk: only the yolk is needed to help bind the cake together.
- All-purpose flour: only a little needed to make this single serve cake.
- Sugar: just a little to sweeten the mug cake.
- Baking powder
- Cinnamon: Give the cake great flavor with this warm spice.
- Shredded carrots: Star ingredient for this cake!
- Walnuts: these are actually option, but it gives the cake a classic carrot cake flavor.
- Cream cheese: the base of your frosting.
- Powdered sugar
- More milk
Directions:
- In large mug add butter and melt In microwave for 30 seconds.
- Add the egg, milk and vanilla whisk together.
- Add in flour, sugar, baking powder and cinnamon. Whisk together till smooth.
- Stir in carrot and walnuts.
- Microwave for 1 minute or until cake pulls away from sides of mug.
- Whisk cream cheese, powdered sugar and milk together till smooth. Pour over cake.
- Serve warm and ENJOY!

Looks like an amazing recipe and I can’t wait to try! The nutrition info is insanely off, if there really is 38 grams of fat then that alone puts it in the mid 300s for calories, not a mere 200. It’s 558 calories for the macros that are entered.

Absolutely why I put a disclaimer about the nutrition info. I personally do not think the nutrition calculators are 100% correct but it’s required to put in the nutrition. I would always suggestion using your own calculator to figure it out. Thanks!

Great craving killer without having to make a whole cake. I love cake with a passion, so if I make one Iโll overeat it. Not to mention my family isnโt a huge fan of carrot cake so Iโd basically have it all to myself. This was perfect. I added a few drops of liquid vanilla stevia to give a little more sweetness. I microwaved it in a small oval glass bowl which worked perfectly and made it very cute. Sprinkled additional walnut pieces and cinnamon on top. It was a bit dry but I think I overcooked it, Iโll do 1 minute next time.

I just tried this recipe and i thought it was amazing!! I would recommend adding 2 tablespoons of sugar instead of 1 and 2 and a half tablespoons of grated carrot. I will definitely make this recipe again!!

Great recipe!
I added a pinch of nutmeg and cardamom in addition to the cinnamon and added chocolate chips instead of nuts, and it was really delicious even without the frosting (+with a side of vanilla ice cream!)
Will definitely make again.

Hi! While I have tried it in this recipe I do know that you can replace 1 egg with 1/4 cup unsweetened applesauce. If you try it, let me know how it goes! Thank you!

Unfortunately this was just too dry and lacking flavor for me. ๐ I was hopeful, and I followed the recipe perfectly (minus making the frosting, which I’m sure is very good).
