If you’ve never made blondies, now is the time to start. Basically it’s a brownies without the cocoa powder but equally delicious!

We love making all kind of s’mores treats. What’s so great about this dessert is that it can be made all year round! No waiting for campfires to make these s’mores blondies!
My kids are loving it! They know when I start buying graham crackers, mini marshmallows and chocolate chips, they are in for a fun treat!
What is a blondie?
Basically a blondie is a rich, sweet dessert that resembles brownies without the cocoa powder. Historically they were made with molasses but then one of the main ingredients to flavor them was the use of vanilla.
I’m thinking now you can pretty much just make them with anything because over all they are so delicious!
Also think of them as a cookie bar type recipe. Again similar ingredients, just more fudge like.
HOW TO MAKE S’MORES BLONDIES!
Ingredients:
- 10 tablespoons unsalted butter, melted
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 1/2 teaspoons pure vanilla extract
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup chocolate chips
- 1/2 cup mini marshmallows
- 2 sheets graham crackers, coarsely crushed
Directions:
- Preheat the oven to 350F. Line an 8 by 8-inch baking dish with 2 pieces of parchment paper so it hangs over all 4 sides.
- Whisk together the butter, white sugar, and brown sugar. Whisk in the egg, and then the vanilla.
- Add the flour and salt to the butter mixture, and whisk just to combine, being careful not to over-mix.
- Stir in the chocolate chips, mini marshmallows, and crushed graham crackers.
- Pour the batter into the prepared dish. Bake until the blondies are golden and set along the outside, but still a touch doughy in the center, about 25 minutes.
- Cool completely before cutting.

Store blondies in an airtight container at room temperature for up to 1 week.

Do you happen to know if this recipe will work well using gluten free flour and graham crackers. Would love to make these for my grandchildren, but one needs gluten free everything. Thank you.

Hi Cathy! I’ve only tested the recipe as is, but you should be able to use a gluten free 1:1 flour substitute. If you decide to experiment, let me know how it goes!
