Now that I am have an Instant Pot I am a little obsessed! As you know I’ve had a pressure cooker for years but it is awesome to finally be able to share recipes with you all!
I was always a little hesitant because the pressure cooker I have is from Italy and wouldn’t really help you but the Instant Pot is perfect!
What kind of pork to use?
For this particular recipe I used Smithfield Marinated Fresh Pork which provides Real Fresh, Real Flavor, Real Fast. Which provides real solutions for real life and busy nights!
You may have seen me make a few other pork recipes using Smithfield®! It’s so flavorful and good!
What’s even better is that their product is available in store or for Walmart’s Online Grocery Pickup which is a convenient and easy way to get your shopping done, so you can focus on getting dinner on the table.
To make this Instant Pot Pork Tenderloin:
In order to make this you need to simple throw everything in and allow the Instant Pot to cook it! It’s very hands off other than chopping the onions and doing a little stirring!
For the ingredients:
- 2 tbsp olive oil
- 1/2 red onion,, diced
- 1 tsp onion salt
- 3 cups carrot chips
- 24 ounces red petite potatoes
- Garlic powder
- 1 1/2 pounds Smithfield Slow Roasted Golden Rotisserie Flavor Pork Tenderloin
- Chicken stock, no salt added
- Dried parsley
STEP 1:Turn Instant Pot on sauté. Pour in olive oil, then add onions. Cook for 2 minutes, stirring occasionally.
STEP 2: Add in onion salt and carrots. Stir. Add pork. Then potatoes and garlic powder. Stir. Add in chicken stock.
STEP 3: Hit cancel on Instant Pot and hit manual. Close lid. Program for 20 minutes. Make sure valve is set to seal position. (will take almost 10 minutes to come to pressure).
STEP 4: When timer is done turn valve to quick release. (Watch out for hot steam! Open Instant Pot, move food to serving dish. Sprinkle with parsley.

I’m all about easy crockpot meals when life gets busy! This pork looks and sounds amazing!
Nancy
This recipe is for the Instant Pot, not a crock pot.
Pam Harless
Can you possibly tell me if I do not put the potatoes in how long to cook?
Nancy P.
Hi Pam, I would cook it at least 15 minutes, then check the temperature of your pork to make sure it is at least 145° F internal temp. All it to rest for 3 minutes before cutting! thanks!
Kelli
Is it set to high or low setting
Nancy P.
Hi Kelli, I have mine set to high! Thanks!

I love to cook! Learning and updating new recipes for daily menu makes me more interested and love my work. Today’s my lucky day, Instant Pot Pork Tenderloin with Potatoes & Carrots is great, just follow the instructions and everything is easy, I like that. Thanks for your sharing
Wendy Thompson
Can you use a Frozen loin? or does it have to be thawed? thanks!
Nancy P.
Hi Wendy! Great question. I have actually not tried it from frozen but I did a little research and yes you should be able to cook the tenderloin from frozen. To do just the tenderloin it takes about 14 minutes so I believe leaving the cooking time at 20 minutes with the vegetables should be good. Always temp your pork to make sure it is 145 degrees when it’s done! Please let me know how it turns out!! Thank you!
Wendy Thompson
Well, my loin ended up thawing fast enough so I didn’t have to cook from Frozen, but it came out fantastic! We opted for no carrots, we also seared it. We don’t have an Instapot we just bought a NinjaFoodi – and airfyer and instapot combo and it was wonderful. Thanks for the recipe. I will definitely be checking here for more!

I had to come back to this page after trying the recipe to thank you for it. I know a recipe is a hit when my picky eater husband says, without prompting, how tasty it is! And it was so easy to make! I’m a new follower on Pinterest and will be looking for more recipes like this one. Thanks again.
Nancy P.
Thank you so much Jennifer for letting me know and thank you for following along!

Hey I’m gonna try this recipe tonight with my brand new never been used instant pot duo. Will let you know outcome
Nancy P.
Great! hope you enjoyed it!
Sarah Schumacher
Sounds like an extremely long time for tenderloin – I usually do my tenderloins for 2-4 minutes. Pork loin is usually 15-20
Nancy Piran
Hi Sarah! This has been tested multiple times and worked like a charm each time! Hope you enjoy it, if you give it a try!
William H.
Made according to recipe except sauteed the pork loin first, then the onions, and deglazed the pan. Also added portabella mushrooms to the mix and it was wonderful!
Nancy Piran
Hi William! I’m so glad you enjoyed the recipe! Thank you for this kind review!
Charlotte
Definitely one for the recipe box. It can be easily customized to your desired marinade and/or seasonings. The provided instructions yielded perfectly cooked petite gold potatoes. I only feed three so I did half of a 2.25 lb tenderloin. I would cut my carrot chunks bigger next time so they don’t fall apart.
Dane
How much chicken stock
Nancy Piran
Hi Dane! It’s 1 cup.
Caryn
Does this go on the trivet or right into the liquid? Thanks.
Nancy Piran
Hi Caryn! It goes right into the liquid. Hope you enjoy it!
RF
Instant Pot temp: Is it Hi or Lo? For 20 minutes
Nancy Piran
Hi RF! My IP in an older model but I believe it is high pressure. Enjoy!

Nikki
If I don’t want onions or potatoes just carrots do I need to sautee first or just add stock carrots and pork and pressure cook. First time using our 9 in 1 instant pot
Nancy Piran
Hi Nikki, you could probably skip the sauteeing part. It just helps bring out the aromatics of the seasonings and vegetables. Let me know how it goes!
Linda
My husband & I really like this recipe. I made a few different changes but it was because what I had in the frig. This will be in my files for future meals/
