When making dinners I always lean toward, easy but good! Pasta is a big hit with the kids and they often as for it. My hubby being Italian could eat it every day so it’s never a problem for him.
Personally I try to mix it up a little with our grains and proteins. Enter Instant Pot Chicken Drumsticks!
When making these these chicken legs I went the extra step to broil them. It get’s the skin extra crispy, which I like. Some of us around here are not big fans of soggy skin! ME!
HOW TO MAKE INSTANT POT CHICKEN DRUMSTICKS
INGREDIENTS:
- 8 pieces chicken drumsticks
- 1 tablespoon paprika
- ยฝ teaspoon black pepper
- 1 teaspoon onion powder
- ยฝ teaspoon garlic powder
- ยผ teaspoon dried oregano
- kosher salt
- 1 cup water
- 1 tablespoon extra-virgin olive oil
DIRECTIONS:
- In a small bowl make the dry spice rub by mixing paprika, black pepper, onion powder, garlic powder, oregano, and salt.
- In large bowl add chicken. Add the spice rub to the chicken and mix well.
- Set the instant pot on SAUTE function
- Add oil to the pot, once hot add all the marinated chicken drumsticks in a single layer and brown the sides (Around 2-3 minutes for each side). *May need to do this in two batches.
- Transfer chicken to a plate.
- Add water to the pot and deglaze the pot. Hit cancel. Place trivet in the pot. Arrange the chicken drumsticks on the trivet.
- Close the lid and pressure valve. Select the PRESSURE COOK or MANUAL button on HIGH PRESSURE and cook for 10 minutes.
- Once the pressure-cooking cycle is over, allow the pressure to release naturally for 10 minutes.
- Open the lid and select the CANCEL button.
- Carefully take the chicken out with the help of tongs.
- Transfer the chicken to a baking tray or casserole dish. Broil the chicken drumsticks for 2 minutes per side.
- Serve hot. (OPTIONAL) Garnish with chopped cilantro and BBQ sauce.
