Easy Taco Skillet is a one pot meal that is ready in less than 30 minutes! With lots of spice, flavor and topped with cheese.
One pot meals are essential these days! Working from home and kids attending school online things can get pretty hectic. We do lots of pasta dishes and one pot meals to get through lunch and dinner time!

My kids will tell you they are tired of this easy taco skillet. I have made it about six times to test and retest it so I could share it with YOU! I really just wanted to have the flavors and timing down quickly.
So we LOVE tacos, enchiladas and any kind of Mexican food. You would never know because I don’t share it often here on the blog, which is going to change because I know if we love it, you will too!
A FEW NOTES ABOUT THIS SKILLET MEAL!
We used pintos beans because that is a type of bean the whole family eats. You can make this dish with black beans or cannellini beans. We have tested it with both and they are really good!
Want some heat added to this? Chop up some jalapeรฑos and throw them in, or use medium/hot salsa.
HOW TO MAKE EASY TACO SKILLET!
Ingredients:
- 1 pound ground beef
- 1/2 medium onion, diced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1 teaspoon cumin
- 1 (15 oz) can no salt added pinto beans, drained (you can use black beans or cannellini beans)
- 1 (14 oz) can no salt added corn, drained
- 1 (14 oz) can fire roasted diced tomatoes
- 4 oz mld salsa
- 12 flour tortilla shells, sliced in strips
- 2 cups Mexican style cheese
Directions:
- Preheat oven to 400ยฐ F.
- In large oven safe pan add ground beef. Cook over medium-high heat for 2 minutes, stirring frequently or until no longer pink. Remove beef from pan.
- Add olive oil and onion. Sautรฉ on medium-high heat for 2-3 minutes or until onions are soft.
- Next add salt, paprika, and cumin. Stir well.
- Add pinto beans, corn, tomatoes and salsa. Stir well. Cook for 5 minutes.
- Place tortilla strips on top and mix.
- Top with cheese.
- Place in oven and bake for 10 minutes.
- Serve warm and ENJOY!
