Using my basic cookie recipe these Apple Cinnamon Oatmeal Cookies have a fall twist to them! With lots of apples and cinnamon flavor! These are soft and chewy cookies filled with bits of apple and a touch of cinnamon!

A few other oatmeal cookies that I have hanging around the blog are, white chocolate oatmeal raisin cookies! These are my absolute favorite! They are a little spin off the traditional oatmeal raisin cookies with the added white chocolate! So tasty!

How to make Apple Cinnamon Oatmeal Cookies!
Ingredients:
- butter is essential to making most cookies. I like to use unsalted butter and not margarine.
- all purpose flour works best for this recipe
- egg! This recipe only calls for one egg. Make sure it is at room temperature.
- brown sugar and white sugar.
- oats. We use old fashioned oats in this recipe, not quick oats!
- apples! You can really use any variety of apple in these cookies!
Directions:
- Preheat oven to 375 ℉. Line baking sheet with parchment paper or silicon mat. Set aside.
- In mixing bowl add butter and sugars. Whisk till incorporated.
- Whisk in egg and vanilla.
- Stir in flour, oats, baking soda and cinnamon till incorporated.
- Stir in apples.
- Using a cookie scoop, scoop onto baking sheet.
- Bake for 9-11 minutes or just until golden brown.
- Cool for 5 minutes.
- Serve and ENJOY!

Apple Cinnamon Oatmeal Cookies
Perfect for fall! These Apple Cinnamon Oatmeal Cookies are perfect for snacking!
Ingredients
- 1 stick butter, softened (8 tablespoons)
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 egg, room temperature
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1/2 cup old fashioned oats (also known as rolled oats)
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1 apple, skin on, cored and diced (about 1 cup of diced apple)
Instructions

Notes
Make sure apple is diced into little pieces
STORE:
Store in refrigerator for up to 4 days. Store in freezer for up to 3 months. Defrost by letting them come to room temperature.
