Well hello May! Where did you come from? I feel like I was just making this Red Velvet Milkshake and Baked Herbed Salmon! This year has been zooming by, it must because I do not feel like I have taken any kind of break for at least three weeks now!
So tell me, how was your weekend? Mine was eh. We did about 1000 miles on our car and my back and neck hurt for most of the time.
I woke up on Saturday morning with some serious neck and back pain. A “crick in the neck” is no fun when on vacation. So my day was somewhat miserable.
One of the most precious times of the trip was when I was laying down Saturday night on our hotel bed and my 3 yr old climbed on and curled up next to me. She knew i was hurt. She asked if I was okay. She stayed with me for a while. I think she wanted to know I was going to be okay and I think she wanted to help me feel better.
Being a mother is such a gift and I am so blessed to be able to be the mother of all of my wonderful child.
One of my memories of baking with my own mother is making banana bread. We used to make it a lot but for years I never learned to bake it for myself. For the last month I haven’t wanted to bake anything else but banana bread.
So maybe for Sunday if you want to share a loaf of love or just baking with your kids or family I think you should add this bread to the list.
Putting apples in it was my hubby’s idea and I think it was a really good one. The bread is very moist and the flavor is amazing! Enjoying baking!!

Apple Cinnamon Banana Bread
Apple Cinnamon Banana Bread is moist inside and has a delicious flavor with the added ingredients of apples and cinnamon chips!
Ingredients
- 2 cups flour
- 3/4 teaspoon baking soda
- 1/8 teaspoon salt
- 2 teaspoons cinnamon
- 2 bananas, mashed
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/3 cup sour cream
- 1/4 cup vegetable oil
- 2 eggs
- 2 teaspoons vanilla
- 3/4 cup cinnamon chips
- 1/2 cup diced apple
Instructions
- Preheat oven to 350 and prepare 9×5 inch loaf pan with parchment paper.
- In one large bowl mix flour, baking soda, salt and cinnamon.
- In another large bowl mix together banana, sugar, brown sugar, sour cream, oil, eggs and vanilla.
- Add wet mixture to the flour mixture and stir well till all is incorporated.
- Stir in apples and cinnamon chips. Pour into loaf pan.
- Bake for 1 hour and 10 minutes.
- Cool before removing from pan. Cut and ENJOY!

Thanks for the question. They are chips like chocolate chip but cinnamon flavored. They are found in the baking isle. I think you may only find them in the USA, I hear they are not available overseas. Thanks!

I couldn’t find cinnamon chips but my stores are limited. so I tossed white chocolate chips with a touch of veggie oil & a generous amount of cinnamon. I don’t know if they are the same but it tasted very yummy & didn’t last long with the grandkids around & son-in-law!

No cinnamon chips here in Australia.. Can anyone tell me the amount of ground cinnamon I would have to use to equal the chips. Possibly the other cinnamon listed would be enough.. Not sure.. any reply would be welcome.

Here is a recipe to make homemade cinnamon chips. I have not tried it but maybe it will work. Hope this helps!

This is the best banana bread recipe ever! I’ve made a lot of recipes in my life and when I hit on a good one, it’s on my list. This is sweet, but not too, and with enough banana flavor, but the apple is there. I love cinnamon chips and use them frequently in fall and winter. This bread is perfect with them. Honestly, soooo good! But mine was done early so start watching at 55 minutes. I used a glass bread pan. Thank you so much for this recipe!

I think to have the correct amount of liquid, the cup measurement is needed for the banana pulp, which can vary with each banana, depending on size. Also, as you can see in the photo, this appears to be a very squat, wide loaf. It is more attractive in a smaller pan, such as 8.5 x 4.5 or, even better if you happen to have one about 10 x 3.5, which is about the same capacity as the 9 x 5-inch pan. The longer, narrower loaf is more attractive. Not all stores carry the cinnamon chips, but I am sure Amazon has them. A good and tasty recipe. It would be helpful as most sites have done, to now also include the metric measurements for those who use a scale.
