When it comes to putting a side dish on the table, potatoes are my go-to. They can be so easy to make, with very little prep!

Growing up, I kind of only remember Mom making mashed potatoes or potatoes that were baked with a pot roast. Other than that, I am not sure if we just had roasted potatoes.
For me, I make them all of the time. I normally bake them in my toaster oven which is so convenient! The first time I made roasted potatoes for you was when I made these spicy roasted rosemary potatoes! I loved them! The kids kind of shy away from the spice, but for me, the spicier the better!
HOW TO MAKE ROASTED ROSEMARY POTATOES:
Ingredients:
- one and a half pounds of creamier yellow potatoes
- olive oil
- salt
- dried rosemary (or fresh if you have it)
Directions:
- Preheat oven to 400ยฐ F.
- Spray casserole dish with non stick cooking spray.
- Layer potatoes in even layer.
- Sprinkle with extra virgin olive oil.
- Add salt.
- Add rosemary.
- Toss.
- Bake for 25 mins or until golden brown and tender.
- Serve warm and ENJOY!

- 1 1/2 pounds baby yellow creamer potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 teaspoon dried rosemary
Instructions
