Which variety of mushrooms to use?
When I decided to make these I went with baby portobello mushrooms. First of all, I just really like the look of them. Second of all, they are less watery than white button mushrooms. Finally, they have great flavor, which is more earthier and meatier tasting.
Another good variety is shiitake mushrooms. I will say that they are the most expensive, so I definitely reach for the baby portobello mushrooms more than I do the shiitake.
How to wash mushrooms?
For years and year I have always soaked my white button mushrooms, which is probably what helps produce a mushroom that was full of water when cooked.
I decided to take expert advice and simple clean the mushrooms with a paper towel and water. This takes a little long but I really love the end result when the mushroom is cooked.
How to cook mushrooms?
There are several ways to cook mushrooms. Two ways that are popular in my house. Oven and sautéed. The sautéed version is my favorite because it’s fast and easy and only takes about 10 minutes!
Different uses for mushrooms!
One of the most common ways we use mushrooms around here is in this instant pot creamy mushroom risotto. This was the first risotto recipe I learned to cook with pressure cooking. Although the mushrooms are not sautéed here, it’s still a tasty dish.
Another common way we use mushrooms is throwing it over pasta like in this pancetta mushroom fettucine. The shiitake mushrooms are sautéed! It really is so delicious with the pancetta, you must try it!

How To Sauté Mushrooms
Ingredients
- 2 pounds baby portobello mushrooms
- 2 tablespoons olive oil
- 1/2 onion diced
- 5 cloves garlic
- 2 teaspoons salt
Instructions
- Clean mushrooms, slice and set aside.
- In large pan over medium heat add olive oil, onions, and garlic. Sauté for about 3 minutes or until onions are translucent.
- Add mushrooms. Sauté for 3 minutes. Add salt, stir.
- Continue to cook for 4 minutes or until mushrooms are softened.
- Serve and ENJOY!
