When I made these grilled lemon shrimp skewers for you I knew I need to add some vegetables to the mix! What goes more perfectly with shrimp than veggies?

How to Make Grilled Vegetable Skewers!
Ingredients:
- one red onion, diced
- 8 ounces cherry tomatoes
- one zucchini, diced in large pieces
- one orange pepper
- 8 ounces button mushrooms
- salt
- pepper
- olive oil
Directions:
- Thread the vegetables on your skewers.
- Brush with olive oil.
- Sprinkle with salt and pepper.
- Grill for 4-5 minutes, rotate and grill for 4-5 more minutes or until vegetables are tender.
- Serve warm!
Want to make them in the oven?
I had the problem for a long time where we didn’t have a grill, so I kind of bypassed all of the grilled recipes. I changed that up by buying a grill pan but if you don’t have one you can definitely roasted these in the oven.
Preheat oven to 400 degrees F. Roast for 10-12 minutes or until vegetables are tender.
These skewers are easily adaptable to any vegetable you add. I would say that if you are wanting to add potatoes you will need more time to cook them.
You can also add a protein to them too like chicken, steak or shrimp!

Ingredients
- 1 medium red onion, diced in medium pieces
- 8 ounces cherry tomatoes
- 1 medium zucchini, diced in medium pieces
- 1 medium orange pepper, diced in medium pieces
- 8 ounces button mushrooms, stems removed
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon pepper
Instructions
- Preheat grill.
- Thread the vegetables on your skewers.
- Brush each skewers with olive oil.
- Sprinkle each skewers with salt and pepper.
- Grill for 4-5 minutes, rotate and grill for 4-5 more minutes or until vegetables are tender.
- Serve warm and enjoy!
