With the kids being home, we have been cooking a lot! Honestly I feel like I am in a rut when it comes to thinking of what to make for dinner. So thankful my hubby is taking on half the cooking because it’s not always easy knowing what to make for the family.
With that said, we make sure we keep lots of vegetables in the house. They are super easy to cook and throw into any kind of pasta or rice dish! Even roasted alone, like these sheet pan roasted tomatoes, they are pretty fabulous!
I have few shrimp dishes that we are loving right now! One are these grilled lemon shrimp skewers! Can’t get enough of grilled shrimp! Also if you have 4 minutes then you can totally make this instant pot sweet and sour shrimp! So tasty!
How to make Garlic Thyme Shrimp and Veggies!
Ingredients:
- one and a half pounds raw shrimp, cleaned and washed
- medium red bell pepper, diced
- 1 medium yellow bell pepper, diced
- half medium zucchini, diced
- large onion, quartered
- 5 garlic cloves, chopped
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme
- 1 teaspoon cayenne pepper
- salt and pepper to taste
- lemon rings for taste

Garlic Thyme Shrimp and Veggies
Easy Garlic Thyme Shrimp and Veggies! Cooks up in 10 minutes! This dish is loaded with lots of flavors and comes together in no time!
Ingredients
- 1 1/2 half pounds raw shrimp, cleaned and washed
- medium red bell pepper, diced
- 1 medium yellow bell pepper, diced
- 1/2 medium zucchini, diced
- large onion, quartered
- 5 garlic cloves, chopped
- 1 teaspoon fresh thyme
- 1 teaspoon cayenne pepper
- salt and pepper to taste
- 2 tablespoons olive oil
- lemon rings for taste
Instructions
- In a large bowl, add shrimp peppers, zucchini, onion, garlic, thyme, cayenne pepper, salt, pepper and oil. Combine well and let marinate in the refrigerator for 20 minutes.
- Heat a large non-stick skillet and fry the shrimp mix for about 10 minutes by stirring from time to time.
- Serve hot with lemon and rice. ENJOY!
