When I made this simple apple compote for you guys, you went super crazy for it! Of course, why not! It’s so easy and the best way to use up fresh fruit! So here is a simple version made with cherries that will not disappoint!

What is a fruit compote?
So basically a compote is whole or pieces of fruit cooked in sugar and water.
It’s super easy to make and can be served over just about anything!
We enjoy it over pound cake, ice cream and topped on my homemade maple cinnamon granola!
How to make Easy Cherry Compote?
Ingredients:
- 1/2 cup water
- 1/4 cup sugar
- 3 cups cherries, pitted and sliced in half
- 1/2 teaspoon vanilla
Directions:
- In a medium size pot add water and sugar. Cook for about 2 minutes, just until sugar dissolves.
- Next, add in the cherries. Stir and allow to simmer and medium-low heat for 13 minutes. Stirring occasionally.
- Add in vanilla, stir and allow to simmer for another 5 minutes.
- Remove from heat and allow to cool.
