Smoked Ham, Mozzarella and Provolone Cheese Pretzel Bites

So apparently there is some sort of big game on this weekend. Am I right? Just kidding I know what it is. Well we never really do anything big for the game and half the time don’t even get to watch it. Which I wish we did but we always end up having something else going on.

Smoked Ham, Mozzarella and Provolone Cheese Pretzel Bites

For this year I decided I wanted to make something. My son has been hounding me to make homemade pretzels. I really wanted to add my own twist to it. I did not want a bunch of dough to stick into cheese. I wanted something a little more substantial.

Smoked Ham, Mozzarella and Provolone Cheese Pretzel Bites

This particular dough and recipe requires a lot of waiting around, which can sometimes be great. You can whip it up the night before and leave it resting or you can do it the morning of. You can make it and then head off to church or Sunday brunch or whatever you do on Sunday mornings and come back to it in the afternoon.

Smoked Ham, Mozzarella and Provolone Cheese Pretzel Bites

SMOKED HAM, MOZZARELLA, AND PROVOLONE PRETZEL BITES

recipe adapted from Ham and Cheese Pretzel Bites

YIELDS: 8 servings

PREP TIME: 2 hours, 40 minutes

COOK TIME: 20 minutes

TOTAL TIME: 3 hours

Ingredients:

1 package active dry yeast
2 tablespoons brown sugar
1 1/3 cups warm water
2 tablespoons olive oil
1 tablespoon salt
3 to 3 1/2 cups all purpose flour
8 ounces smoked deli ham, chopped
8 ounces Sargento® Artisan Blends® Shredded Mozzarella & Provolone Cheese
6 cups water
4 teaspoons baking soda
Egg yolk and a splash of water

Directions:

1. Combine the yeast, brown sugar and water in mixing bowl. Rest 5 minutes.
2. Add two cups of flour and mix using dough beaters.
3. Mix in olive oil and salt. Continue to mix in flour till a nice ball forms.
4. Turn out onto floured surface and knead till no longer sticky. Add more flour if needed.
5. In large bowl brush with olive oil and place dough inside and cover. Let it rise 2 hours.
6. When done turn dough out onto floured surface and divide into four pieces.
7. Roll one out into a rectangle section.
8. On one long side of the rectangle sprinkle with 2 oz of ham and next to that 2 oz of cheese.
9. Grab side with ham and roll tightly to the other side.
10. Cut into 12 pieces and place on a cookie sheet lined with parchment paper.
11. Repeat with the 3 remaining pieces. Then rest 30 minutes.
12. Preheat oven to 400 degrees. Heat a pot of water to a boil and add baking soda. Reduce to a simmer.
13. In batches drop pieces into water for 20-30 seconds. Using a slotted spoon pull pieces out and place back onto cookie sheets.
14. When done, brush all with egg and water mixture.
15. Bake for 15 minutes or until golden brown. Cool and ENJOY!
