So the weekend has pretty much been cough, fever, sleeping and soup. My daughter has been sick and this was one of the only things she would eat.
This is just a basic broth soup with lots of flavor and some hearty veggies. This is something my mother-in-law likes to make for us when we visit. It is so nice to eat especially when it is cold. I toned down the flavor to make it easy on the stomach for my baby girl but you can crank it up a notch with just a few added ingredients.
Broth Soup
Yield: 4 Servings
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Good enough to feed the cold!
Ingredients:
2 Potatoes diced
1 Carrot diced
1 Celery diced
4 Cups Water
½ Bouillon cube (any flavor)
Salt for taste
ADD INS FOR EXTRA FLAVOR:
½ cup of diced onion
¼ cup of Parmesan cheese
dried parsley
fresh basil
Directions:
- Heat water over medium, dissolve cube.
- Add in potatoes, carrot, celery. (and onion if prefer)
- Add salt.
- Boil on medium low heat until vegetables are tender.
- At this point you can add the cheese or any herb for extra flavor
- Allow to cool for 5 minutes.
- Serve and ENJOY!
