Sausage Vegetable Soup

This Sausage Vegetable Soup is easy to put together and is the best comfort food. Loaded with vegetables and sausage!

Ingredients

  • 1 cup diced yellow onion
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon salt
  • 2-3 carrots peeled and sliced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 8 oz bratwurst casings removed (about 2 brats)
  • 1 pound little potatoes halved
  • 5 cups hot water
  • ½ teaspoon better than bouillon vegetable flavor
  • 8 ounces unsalted tomato sauce
  • optional Top with parmesan shavings and fresh parsley (dried can be used)

Instructions

  • Using a large pot, saute on medium heat  onion in olive oil till translucent about 2-3 minutes. Add carrots, salt, basil, and oregano. Saute for 2-3 minutes
  • Add sausage and brown, breaking it into pieces as you go. About 3-5 minutes.
  • Add potatoes.  Saute for 2-3 minutes.
  • Add water,  bouillon and tomato sauce.
  • Bring to a boil about 3-4 minutes. 
  • Reduce heat and let it simmer for 15 minutes or until potatoes are softened.
  • Top with parmesan shavings and parsley.
