Preheat oven to 350F. Line two cookie sheets with parchment paper and set aside.
In a large bowl combine cake mix, eggs, vegetable oil and ½ cup of chocolate chips until incorporated.
Scoop cookie dough onto prepared cookie sheets using a small scoop leaving at least 1 ½” between scoops. Bake cookies for 10-12 minutes or until edges start to turn golden brown.
Allow cookies to cool on cookie sheets for 2-3 minutes then transfer to a wire rack to finish cooling.
Once cookies have cooled, line a cookie tray with parchment paper and set aside.
Melt the remaining 1 cup of chocolate chips by microwaving in 30 second increments until smooth. Dip cooled cookies into melted chocolate covering ½ of the cookie. Place dipped cookies on the parchment lined cookie sheet and allow chocolate to set. Repeat with remaining 1 cup chocolate chips.
