Double Chocolate M & M Monster Cookies

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (1 stick)
  • 1/2 cup smooth peanut butter
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 egg room temperature
  • 1/2 cup M&M's + extra for decorating
  • 1 cup mini chocolate chips + extra for decorating

Instructions

  • Preheat the oven at 350 deg F and line the baking tray with parchment paper.
  • In a large bowl mix the butter, both the sugars and vanilla extract together using an electric mixer until light and creamy. Add in the egg, peanut butter and beat till everything is mixed well.
  • In another bowl, mix the dry ingredients together (flour, cocoa powder, baking soda, oats, and salt).
  • Now add the dry ingredients to the wet mixture in batches and mix till everything is well incorporated.Add the chocolate chips and M&M's and mix well. Refrigerate for at least 30 mins.
  • Once refrigerated, scoop out a portion of the dough and roll between your palms, and place them on the tray, while keeping adequate space between the cookies. 
  • Sprinkle some chocolate chips and stick M&Ms on the top of the cookies (optional)
  • Bake for 12-15 mins. Let them cool (10 mins) and Enjoy with a glass of milk.

Notes

  • Oats, peanut butter, and cocoa powder add a savory element to these cookies. Therefore, despite having so many sweet ingredients the sweetness doesn’t overpower the whole palate.
  • You can add nuts, raisins, and/or white chocolate chips to add an extra layer of flavor.
  • Use ingredients at room temperature.
  • Oats add texture to these cookies and make them a bit chunky.
  • These cookies are not chewy but they are a bit crunchy.
