- 1 pound ground beef
- 1/2 medium onion diced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1 teaspoon cumin
- 1 15 oz can no salt added pinto beans, drained (you can use black beans or cannellini beans)
- 1 14 oz can no salt added corn, drained
- 1 14 oz can fire roasted diced tomatoes
- 4 oz mld salsa
- 12 flour tortilla shells sliced in strips
- 2 cups Mexican style cheese
Preheat oven to 400° F.
In large oven safe pan add ground beef. Cook over medium-high heat for 2 minutes, stirring frequently or until no longer pink. Remove beef from pan.
Add olive oil and onion. Sauté on medium-high heat for 2-3 minutes or until onions are soft.
Next add salt, paprika, and cumin. Stir well.
Add pinto beans, corn, tomatoes and salsa. Stir well. Cook for 5 minutes.
Place tortilla strips on top and mix.
Top with cheese.
Place in oven and bake for 10 minutes.
Serve warm and ENJOY!
