Ingredients

  • ½ cup sugar
  • ¼ cup brown sugar
  • ¼ cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup pumpkin
  • 1 1/2 cups flour
  • ¾ teaspoon baking soda
  • 1 teaspoons cinnamon
  • 1/4 teaspoon ginger and nutmeg

Instructions

  • Preheat oven to 350 and prepare 9×5 inch loaf pan with parchment paper.
  • In a large bowl mix together sugar, brown sugar, oil, eggs and vanilla.

  • Add flour, baking soda, cinnamon, ginger, and nutmeg.

  • Stir well till all is incorporated.

  • Pour into loaf pan.

  • Bake for 50- 60 minutes or until toothpick inserted comes out clean.
