- ½ cup sugar
- ¼ cup brown sugar
- ¼ cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla
- 1 cup pumpkin
- 1 1/2 cups flour
- ¾ teaspoon baking soda
- 1 teaspoons cinnamon
- 1/4 teaspoon ginger and nutmeg
Preheat oven to 350 and prepare 9×5 inch loaf pan with parchment paper.
In a large bowl mix together sugar, brown sugar, oil, eggs and vanilla.
Stir in pumpkin.
Add flour, baking soda, cinnamon, ginger, and nutmeg.
Stir well till all is incorporated.
Pour into loaf pan.
Bake for 50- 60 minutes or until toothpick inserted comes out clean.
Cool before removing from pan. Cut and ENJOY!
