Grilled Vegetable Skewers

Easy Grilled Vegetable Skewers made with 5 different vegetables, flavored with salt, pepper and olive oil! Perfect for the grill or oven!

Ingredients

  • 1 medium red onion diced in medium pieces
  • 8 ounces cherry tomatoes
  • 1 medium zucchini diced in medium pieces
  • 1 medium orange pepper diced in medium pieces
  • 8 ounces button mushrooms stems removed
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper

Instructions

  • Preheat grill.
  • Thread the vegetables on your skewers.
  • Brush each skewers with olive oil.
  • Sprinkle each skewers with salt and pepper.
  • Grill for 4-5 minutes, rotate and grill for 4-5 more minutes or until vegetables are tender.
  • Serve warm and enjoy!

Notes

** For roasting in the oven. Preheat oven to 400 degrees F. Place skewers on baking sheet. Brush each skewers with olive oil. Sprinkle each skewers with salt and pepper. Bake for 10-12 minutes or until vegetables are tender. Serve warm and enjoy!
