Apple Cinnamon Oatmeal Muffins
These muffins are perfect for freezing! Pull them out when you ned to grab something and go! Full of fall flavors!

For the muffins:
- 1 stick unsalted butter melted
- 1 cup milk room temperature
- 2 eggs room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup brown sugar packed
- 2 cups all purpose flour
- 1/2 cup old fashioned oats
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 1/2 cups diced apples
FOR THE TOPPING:
- 4 tablespoons unsalted butter melted
- 3 tablespoons all purpose flour
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1 tablespoon old fashioned oats
For the drizzle:
- 1/2 cup powdered sugar
- 1 tablespoon milk
Preheat oven to 400 ℉. Line muffin pan with liners. Set aside.
In large bowl add butter, milk, eggs, vanilla and brown sugar. Whisk together until completely incorporated.
Add in flour, oats, baking soda and cinnamon. Stir in apples until combined.
Scoop into muffin liners. Set aside.
In small bowl add melted butter, flour, brown sugar, cinnamon and oats. Stir together.
Sprinkle the top of each muffin with a little of the topping mixture.
Bake for 12 minutes.
Serve warm and ENJOY!
