Grilled Ranch Chicken Thighs

Easy fresh chicken thighs grilled and marinated in ranch dressing with the robust flavors of onion, tomatoes, and fresh sage.

Equipment

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 roma tomato diced
  • 1/3 cup onion diced
  • 1 teaspoon fresh sage chopped
  • 2/3 cups ranch dressing
  • 1 tablespoon extra-virgin olive oil
  • 1 ½ - 2 pounds boneless skinless chicken thighs

Instructions

  • Place chicken in a shallow baking dish and set aside.
  • Add oil, tomato, onion and sage to a small pan. Sauté for 2-4 minutes or until softened and onions are translucent.
  • Stir in ranch dressing. Remove ¼ cup sauce and set aside.
  • Pour the remaining sauce over the chicken. Spread evenly. Marinate for 30 minutes (or more if desired).
  • Preheat grill to 400. (If using grill pan turn on medium heat)
  • Add chicken to grill and cook for 5-6 minutes on each side until the internal temperature reaches 165°.
  • When done, remove from heat and let rest 3-4 minutes. 
  • Brush with reserved sauce.
  • Serve warm and  ENJOY!
