Chewy Oatmeal Granola Bars

Chewy Oatmeal Granola Bars are made in just about 10 minutes! Filled with peanut butter, oats, honey, and any kind of chocolate chip!

Ingredients

  • ½ cup creamy peanut butter
  • cup honey
  • 4 tablespoons butter
  • 2 cups quick cooking oats
  • ¼ cup milk chocolate chips
  • ¼ cup dark chocolate chips

Instructions

  • Line a 9x9 pan with parchment paper and set it aside. 
  • In a small saucepan, combine the honey, butter, and peanut butter. Cook over medium-high speed until smooth, stirring constantly. 
  • Next, add in the oats and stir to combine. 
  • Transfer the granola bars to the prepared pan and spread them out into a thin layer. Press down slightly so pack the granola bars into the bottom of the pan-- you don’t want them to fall apart. 
  • Next, sprinkle over the chocolate chips and press them into the bars. Be careful, the bars are hot! 
  • Transfer the granola bars to the fridge and allow them to set for at least one hours. 
  • Then, slice to your desired size and enjoy! Store any leftover granola bars in an airtight container in the fridge for up to one week. 

Notes

Ingredient Notes
  • The peanut butter helps hold the bars together. 
  • The honey helps add a sweetness and stickiness to the granola bars. 
  • The butter adds moisture and richness. Feel free to use diary free if you’d like. 
  • OPTIONAL 1/4 CUP BROWN SUGAR: The brown sugar adds a bit of extra sweetness to the bars. Feel free to leave it out if you’d prefer. 
  • The oats are the base of our granola bars. I prefer quick cooking in this recipe to old fashioned but either will work.
  • I used a mix of milk and dark chocolate, but feel free to use whatever kind of chocolate you have on hand-- M&Ms would also be delicious! 
Serving Notes 
  • I topped the granola bars with flakey sea salt, but that is completely optional! 
  • I like to keep the granola bars in the fridge until ready to serve-- they’re super soft and chewy and I don’t want them to fall apart if they get too warm.
