Cut the pineapple, cantaloup and mango into fairly larges cubes about 1 inch.
Peel the citrus fruits, remove the peel and the white skin of the fruit. With a very sharp knife remove the segment by passing the blade on each side of the fruit membrane.
Cut the grapes in half.
Place the fruit in a bowl, add the orange juice and mix gently. Reserve in the refrigerator until ready to serve.
Notes
This fruit salad can be stored for a week in the fridge in an airtight container.
Fruits to avoid: bananas, apples, pears, peaches, apricots, strawberries.
Don’t cut the fruit into too small cubes: large pieces keep better.
