Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1/2 cup onion diced
  • One Small orange pepper diced
  • 1 yellow pepper diced
  • 1 pound Italian sausage
  • 2 cups arborio rice
  • 1 1/2 tsp salt
  • 2 cups chicken broth sodium free
  • 2 1/4 cups hot water

Instructions

  • Turn instant pot on sauté. Add olive oil, onions, and peppers. Sauté for 4 minutes.

  • Add sausage.

  • Add rice and salt. Stir and sauté for another minute. Hit cancel.

  • Add broth and water. Stir.

  • Hit manual button on instant pot and set for 6 minutes. Close lid. Make sure valve is set to seal position. (will take almost 10 minutes to come to pressure)

  • When timer is done turn valve to quick release. (Watch out for hot steam)
  • Open instant pot and stir.

Notes

A side not about the water! I have found the hotter my liquids are, the quicker my instant pot comes to pressure. I make sure to heat them quickly in my microwave before pouring them into the instant pot.
