Ingredients

  • 1 pound macaroni noodles
  • 2 tablespoons olive oil
  • 1/2 onion diced
  • 1/2 cup diced carrots
  • 2/3 cup diced celery
  • 2 teaspoons salt
  • 2 garlic cloves
  • 1 pound ground beef or 1/2 pound ground beef and 1/2 pound ground pork
  • 1 teaspoon rosemary
  • 1 1/2 teaspoon oregano
  • 1 teaspoon basil
  • 16 ounces tomato sauce
  • 3 cups shredded cheddar cheese

Instructions

  • Preheat oven to 400 degrees F.
  • Cook macaroni according to package. Cooks about 7 minutes.
  • In the meantime, in large pan add olive oil, onions, carrots, celery and salt. Cook for 5 minutes.
  • Then add garlic and cook for an additional 2 minutes.
  • Add ground beef and cook for 5 minutes or until beef is cooked.
  • Add in spices and stir. Remove garlic cloves (if not chopped)
  • Slowly add in tomato sauce and stir. Allow to simmer for 5 minutes.

  • When pasta is done, drain and put in large skillet.

  • Top with pasta sauce.

  • Gently stir.

  • Top with cheese.

  • Bake for 12-15 minutes or until cheese is bubbly and melted.
