Using leftover corned beef to make this quick and easy Creamy Gnocchi with Corned Beef and Zucchini!

Ingredients

  • 17.6 ounces gnocchi
  • 2 tablespoons olive oil
  • 1/2 cup onions diced
  • 1 zucchini diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 tablespoons butter unsalted
  • 2 tablespoons flour
  • 1 cup milk
  • 2 cups corned beef shredded

Instructions

  •  Cook gnocchi according to directions. Set aside.
  • In pan add olive oil, onion, zucchini, garlic powder and salt. Saute for 5 minutes or until zucchini is soft. Remove from pan.
  • In the same pan add butter and melt. Whisk in flour.
  • Slowly add in milk and whisk until creamy.
  • Stir in zucchini and corned beef.
  • Stir in gnocchi.
  • Serve warm and ENJOY!
