Ingredients
2
cups
white whole wheat flour
2
tablespoons
corn starch
2
teaspoon
baking powder
2
tablespoons
sugar
2
eggs
1
cup
milk
1/2
cup
whole milk vanilla bean greek yogurt
1
teaspoon
vanilla
5
strawberries
hulled and sliced
2
bananas
diced
8
ounces
crushed pineapple
whipped cream topping
Instructions
Preheat waffle iron.
In mixing bowl, whisk together flour, corn starch, baking powder and sugar.
Add eggs, milk, yogurt and vanilla.
Mix until batter is smooth and without lumps.
Spray waffle iron with nonstick cooking spray.
Ladle in batter till 2/3 of the way full. (or follow instructions for your waffle iron)
Close and cook for 4 minutes.
Remove and allow to cool. Repeat for remaining waffles.
TO MAKE CAKE:
Break waffle into pieces before laying on platter.
Place one waffle on platter.
Top each quarter with pineapple, strawberry, banana and whipped cream.
Add another waffle on top.
Finish off with whipped cream and fruit.
Serve and ENJOY!
