Banana Split Waffle Cake #SundaySupper

Ingredients

  • 2 cups white whole wheat flour
  • 2 tablespoons corn starch
  • 2 teaspoon baking powder
  • 2 tablespoons sugar
  • 2 eggs
  • 1 cup milk
  • 1/2 cup whole milk vanilla bean greek yogurt
  • 1 teaspoon vanilla
  • 5 strawberries hulled and sliced
  • 2 bananas diced
  • 8 ounces crushed pineapple
  • whipped cream topping

Instructions

  • Preheat waffle iron.
  • In mixing bowl, whisk together flour, corn starch, baking powder and sugar.
  • Add eggs, milk, yogurt and vanilla.
  • Mix until batter is smooth and without lumps.
  • Spray waffle iron with nonstick cooking spray.
  • Ladle in batter till 2/3 of the way full. (or follow instructions for your waffle iron)
  • Close and cook for 4 minutes.
  • Remove and allow to cool. Repeat for remaining waffles.

TO MAKE CAKE:

  • Break waffle into pieces before laying on platter.
  • Place one waffle on platter.
  • Top each quarter with pineapple, strawberry, banana and whipped cream.
  • Add another waffle on top.
  • Finish off with whipped cream and fruit.
  • Serve and ENJOY!
