Baked Peas and Kale Macaroni and Cheese

Ingredients

  • 3 tablespoons unsalted butter
  • 1/4 cup diced onion
  • 3 cups Earthbound Farms Kale
  • 1/4 cup milk
  • 1/3 cup peas
  • 1 6 ounce box Horizon Organic Pasta Shells & White Cheddar Cheese

Instructions

  • Preheat oven to 375 degrees. Prepare an 9 X 5 glass loaf pan.
  • In a medium pot bring 6 cups water to a boil. Add pasta and peas. Allow to boil for 10 minutes.
  • In the meantime in a small pan add 1 1/2 tablespoons butter and melt on medium heat. Add onion and kale. Saute on medium heat for 3 minutes. When done, set aside.
  • In a small pot melt 1 1/2 tablespoons butter. Add milk and whisk in cheese sauce. Stir for 1 minute and set aside.
  • When pasta and peas are done drain in colander. Add back into pan. Stir in kale.
  • Pour into baking dish. Pour cheese sauce over the top.
  • Bake in oven for 8 minutes. Serve warm and ENJOY!
