Roasted Cod and Edamame Salad #SundaySupper

Ingredients

  • 2 4- ounce Cod Loins
  • 16 ounces edamame shelled
  • 2 carrots of choice sliced
  • 10 asparagus spears
  • 1 1/2 teaspoon Gomasio or salt
  • 2 tablespoons olive oil
  • 1/2 head iceberg lettuce chopped

Instructions

  • Preheat oven to 415 degrees.
  • Place cod, edamame, carrots, asparagus on baking tray.
  • Top with gomasio and olive oil.
  • Bake for 20-25 minutes.
  • Allow to cool for 5 minutes. Top on lettuce.
  • Serve and ENJOY!
