Ingredients

  • 2 cups flour
  • 1/2 cup Flahavan’s Irish Oats
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 stick butter
  • 2 eggs
  • 1/2 cup brown sugar
  • 4 ounces unsweetened applesauce
  • 2 tsp Rodelle Vanilla
  • 1 cup milk
  • 1/2 cup diced apples

For the crumb topping

  • 1/3 cup flour
  • 2 tablespoons butter
  • 2 tablespoons Flahavan’s Irish Oats
  • 1 tsp cinnamon
  • 2 tablespoons brown sugar
  • 1 tablespoon milk

Instructions

  • Preheat oven to 400 degrees F. Line muffin pan with liners. Set aside.
  • In medium bowl whisk together flour, oats, baking soda, and cinnamon. Set aside.
  • In a medium size pot, melt butter. Remove from heat.
  • Whisk into the melted butter the eggs, sugar, applesauce, vanilla and milk.
  • Stir butter mixture into the flour mixture.
  • Stir in apples.
  • Scoop into muffin liners.
  • In a small bowl mix together butter, flour, brown sugar, and cinnamon till it crumbles. Add a tablespoon of milk.
  • Evenly divide onto the top of each muffin, pressing down gently.
  • Bake 12 minutes.
  • Cool and ENJOY!
