INGREDIENTS • ground beef • onion • extra virgin olive oil • paprika & ground cumin • pinto beans • corn • fire roasted tomatoes • salsa • flour tortilla shells • Mexican blend cheese
Preheat oven 400° F. In large oven safe pan add ground beef. Cook for 2 minutes, stirring frequently or until no longer pink. Remove beef from pan.
Add olive oil and onion. Sauté on medium-high heat for 2-3 minutes or until onions are soft.
Next add salt, paprika, and cumin. Stir well.
Add pinto beans, corn, tomatoes and salsa. Stir well. Cook for 5 minutes.
Place tortilla strips on top and mix.
Top with cheese.
Place in oven and bake for 10 minutes.
