This Instant Pot Sausage and Peppers Risotto is perfect for a quick meal! Filled with Italian sausage and colorful peppers!
If you haven’t ventured into the world of instant pot, I would highly recommend you do! Lots of dinner recipes can be made easily with a very hands off approach to it!

I’ve said this before but we’ve been using a pressure cooker for over 10 years now, so it is nothing new in our house. My husband brought a pressure cooker over from Italy when he moved to the states.
I will honestly say that I was pretty scared to use it. I didn’t understand it. With the instant pot, it so simple. Basically you are placing your lid on, hitting a button and everything cooks itself!
How to make Instant Pot Sausage and Peppers Risotto?
Ingredients:
- 2 tablespoons extra virgin olive oil
- 1/2 cup onion, diced
- one orange pepper, diced
- 1 yellow pepper, diced
- one pound Italian sausage
- 2 cups arborio rice
- 1 1/2 tsp salt
- 2 cups chicken broth, sodium free
- 2 1/4 cups hot water
Directions:
- Turn instant pot on sauté. Add olive oil, onions, and peppers. Sauté for 4 minutes.
- Add sausage.
- Add rice and salt. Stir and sauté for another minute. Hit cancel.
- Add broth and water. Stir.
- Hit manual button on instant pot and set for 6 minutes. Close lid. Make sure valve is set to seal position. (will take almost 10 minutes to come to pressure)
- When timer is done turn valve to quick release. (Watch out for hot steam)
- Open instant pot and stir.
- Serve immediately and ENJOY!

As I said on your recipe for the Instant Pot Pork Tenderloin with Potatoes and Carrots, I’d be looking for more recipes. So here I am! We loved this Instant Pot Sausage and Peppers Risotto! It was a little watery when I unlocked the lid, but I mixed in some parmesan – since the recipe didn’t call for it, and it *is* risotto, after all! And it thickened right away. My picky eater husband asked me to put this in our regular rotation. I might try it with ground turkey next time. Thanks again.
