If you are looking for a quick meal to make for the family you are going to love this pasta! In less than 30 minutes you can a simple dish!
We obviously love pasta in our house. Remember the steak gorgonzola pasta that I made. Again so easy and so flavorful.
This time I added a little flair of fall by adding the pumpkin.
How to make the sauce?
Right not I am really into creamy sauces over my pasta, and for good reason. It’s easy and flavorful!
This sauce starts off with a base of olive oil and onions. Then I added fresh sage, because my garden is overflowing with it. Next I added the pumpkin, cream and pasta water.
Lastly add some slices of Cabot Vermont Sharp White Cheddar Cheese on top before adding the hot pasta. The cheese gives this a sharp but rich flavor! So good guys!

Creamy Pumpkin Pasta
Ingredients
- 8 ounces mini penne
- 1/2 red onion chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh sage
- 2 teaspoons salt
- 1/2 cup pumkin
- 1 cup heavy cream
- 4 slices Cabot Vermont Sharp White Cheddar Cheese
Instructions
- In a large pot of boiling salted water cook penne according to package, about 12 minutes. Reserve 1 cup water then drain, set aside.
- In a large pan add onion and olive oil. Cook over medium heat for 5 minutes.
- Add in sage, salt and pumpkin. Stir.
- Slowly stir in heavy cream, continue to cook for 2 minutes.
- Slowly stir in pasta water.
- Add cheese and pasta. Stir.
- Serve immediately and ENJOY!
