Create an easy and tasty Baked Peas and Kale Macaroni and Cheese that is loved by kids and adults alike!
Let me tell you a little story. A few years ago I started using the internet to help me with that dreaded question of what’s for dinner? Seriously I would type in the ingredients I would have in my kitchen and see what I could concoct.
That eventually lead me to find recipes on food blogs. Before then I didn’t even know what a food blog was. Once I started reading those food blogs and getting inspiration, I started taking pictures of all of my food.
After that I started sharing them with my family and friends. Then an idea came to my head. I said to myself that I could start a food blog and you know what? I did! And you are here looking at recipes that I have created with you in mind.Being a busy mom of five kids, I need something easy to go on the table. I need something that will wow my family because I don’t want them to think food is boring. I want them to know that you can take an ingredient you have in your pantry or refrigerator and WOW them! Today I’ve created this simple, easy, done in 30 minutes baked macaroni and cheese. I knew I was going to add peas into this dish but then I decided it would be awesome to add one more veggie. Baked Peas and Kale Macaroni and Cheese
Ingredients
- 3 tablespoons unsalted butter
- 1/4 cup diced onion
- 3 cups Earthbound Farms Kale
- 1/4 cup milk
- 1/3 cup peas
- 1 6 ounce box Horizon Organic Pasta Shells & White Cheddar Cheese
Instructions
- Preheat oven to 375 degrees. Prepare an 9 X 5 glass loaf pan.
- In a medium pot bring 6 cups water to a boil. Add pasta and peas. Allow to boil for 10 minutes.
- In the meantime in a small pan add 1 1/2 tablespoons butter and melt on medium heat. Add onion and kale. Saute on medium heat for 3 minutes. When done, set aside.
- In a small pot melt 1 1/2 tablespoons butter. Add milk and whisk in cheese sauce. Stir for 1 minute and set aside.
- When pasta and peas are done drain in colander. Add back into pan. Stir in kale.
- Pour into baking dish. Pour cheese sauce over the top.
- Bake in oven for 8 minutes. Serve warm and ENJOY!
