I try not to spend a lot of time on weeknights making meals that will take forever because we are just too busy. What I do try to do is to make sure it is a well balanced meal with great flavor.
Take this Turkey Vegetable Rice for instance. The main part of the meal is made in your skillet! And honestly you could totally eat it alone but I decided to throw it over some rice.
While I was out running around I stopped off at Target to pick up some dinner items. I knew where to I need to go so I head straight back to the refrigerated section. What I love about the “sauce” that I made to put over the rice is that I found ALL of the ingredients in the same area. So my trip in and out of the store was under 10 minutes. So perfect for this busy Mom with hungry kids at home.

Turkey Veggie Rice
Ingredients
- 1 cup water
- 2 cups frozen peas
- 2 red bell peppers sliced
- 1/2 onion sliced
- 1 Hillshire Farm® Smoked Turkey Rope Sausage 13 oz
- Salt
- 4 ounces black olives optional
Instructions
- In skillet add water and peas and cook in medium for 10 minutes.
- Add bell peppers and onions. Allow to continue to cook for 5 more minutes.
- Add sausage and continue to cook for 15 more minutes stirring occasionally.
- Serve over rice and ENJOY!
