It is so good to be back in the kitchen baking and cooking after my trip to Italy. We returned Wednesday afternoon after a 21 hour trip. It was long. I was sick. I stayed cranky for a couple of days. Then by Saturday morning I had had enough. I said to myself I can either stay cranky or go to the kitchen and cook. What wonders it did. I made pancakes for breakfast. Just something I whipped up quickly. But it felt oh so good. I had realized that I had not stepped into a kitchen to cook or bake anything in two weeks. Well I did make myself some coffee, but I don’t think that counts.
Ok this may be the last of butterscotch recipes for awhile. I have used up my butterscotch chips, except for a few that I can throw in my mouth whenever I pass by the cabinet they are stored in.
I saw a recipe online for butterscotch brownie bars. So i thought to myself, why not? I could go for a brownie.
I printed off the recipe and made some tweaks. Basically I have to change every recipe because I never quite have all the ingredients or I do not want to use 5 eggs. They cost!
Let me tell you. These brownies made my taste buds pop. They are chewy and full of chocolate and butterscotch flavors. They are not dry but very moist and not cake like even though they are thick.
CHOCOLATE BUTTERSCOTCH BROWNIES
recipe adapted from here
YIELDS: 16 brownies
PREP TIME: 15 minutes
COOK TIME: 45 minutes
TOTAL TIME: 60 minutes
Ingredients:
CHOCOLATE
1/2 cup flour
1/4 cup cocoa powder
1/8 tsp baking powder
dash of salt
1/4 cup butter, softened
1 and 1/2 cups sugar
2 eggs
1/4 cup semisweet chocolate chips
BUTTERSCOTCH
1/2 cup flour
1/4 teaspoon baking powder
dash of salt
1/4 cup butter, softened
1/2 cup brown sugar
1 egg
1/4 cup butterscotch chips
Directions:
1. Preheat oven to 350 and grease 8×8 pan.
2. FOR THE CHOCOLATE BATTER: Mix flour, cocoa powder, baking powder and salt in bowl and set aside.
3. In a mixer cream together butter and sugar. Then add eggs one at a time until combined.
4. Next add the flour mixture until well blended then stir in chocolate chips.
5. FOR BUTTERSCOTCH BATTER: Mix flour, baking powder and salt in bowl and set aside.
6. In mixer cream together butter and sugar. Then add egg until combined.
7. Next add the flour mixture until well blended then stir in butterscotch chips.
8. In prepared pan spread chocolate batter. Drop spoonfuls of the butterscotch batter on top.
9. Using a knife swirl the two together.
10. Bake for 35 minutes at 350. Then reduce heat to 325 and bake 10 minutes more.
11. Inserted toothpick should come out clean when brownies are cooked.
12. Cool and ENJOY!
