Wow! Can you believe it? Some parts of the States really have autumn coming in like a lion! I had to do a double take last week when I saw some parts of the west were actually getting snow! Do what? I think I may need to make some soup soon.
Anyways I am not ready for snow but I do enjoy the changing of the leaves and the humidity going away!
So I have a confession to make. I haven’t actually watched any football games on T.V. yet. BUT I did see one in person. Does that count?
I thought I would brave my daughters high school football game while she was there playing in the band. Well that was a mistake.
You see it was frigid and I didn’t have a proper jacket on so I was cold. The WHOLE time.
And what happened two days later? I was sick, for a week! Lucky for my family it was nothing serious and I was able to keep up a normal schedule but I felt pretty crappy.
I think I will leave the football watching to the comfort of my home!
The best part of the weekend is when we can sit down, relax on the couch, watch some tv and eat some good food!
I love foods like these Mini Taco Pizzas and Slider for two reason. One because finger foods are just awesome! No need for plates and forks. Reason two is because of how easy they are to make especially when using Pace® Chunky Salsa.

Mini Taco Pizzas and Sliders
Ingredients
- FOR THE PIZZAS:
- 11 ounce refrigerated thin crust pizza dough
- 1/2 pound ground beef
- 2 tablespoons taco seasoning
- 1/4 cup water
- 1/2 cup refried beans
- 1/2 cup mexican shredded cheese
- 1/2 cup Pace® Chunky Salsa Mild
- 1/4 cup shredded lettuce
- 1/4 cup sour cream
- FOR THE SLIDERS:
- 12 whole wheat slider buns
- 1/2 pound ground beef
- 2 tablespoons taco seasoning
- 1/4 cup water
- 1/2 cup refried beans
- 1/2 cup mexican shredded cheese
- 1/2 cup Pace® Chunky Salsa Mild
- 1/4 cup shredded lettuce
- 1/4 cup sour cream
Instructions
FOR THE PIZZAS:
- Preheat oven to 400°F. Spray cookie sheet with nonstick cooking spray, set aside.
- Roll out pizza dough. Using 2 inch cookie cuter, cut 12 round circles, place on cookie sheet.
- Bake for 8 minutes. Remove from oven. (Leave oven on!)
- In the meantime, heat a large skillet over medium-high heat. Crumble ground beef into the hot skillet. Cook and stir until the beef is completely browned, 7 to 10 minutes. Drain and return to pan.
- Sprinkle beef with taco seasoning and 1/4 cup water. Stir and cook for 3 more minutes. Remove from heat.
- When pizza dough is done, spread refried beans evenly on pizza crust. Then top with beef and cheese.
- Place back in the oven for 2 minutes or until cheese has melted.
- Top evenly with lettuce, salsa and sour cream. Serve and ENJOY!
FOR THE SLIDERS:
- Preheat oven 400°F. Place bottoms of buns on cookie sheet.
- Heat a large skillet over medium-high heat. Crumble ground beef into the hot skillet. Cook and stir until the beef is completely browned, 7 to 10 minutes. Drain and return to pan.
- Sprinkle beef with taco seasoning and 1/4 cup water. Stir and cook for 3 more minutes. Remove from heat.
- Spoon refried beans evenly on buns. Top with beef and cheese.
- Bake for 5 minute or until cheese has melted.
- Remove from oven and top with lettuce, salsa, sour cream and tops of buns.
- Serve and ENJOY!
