So my day started out with my 4 yr old cupping my face in her hands and saying “mommy I need milk and cookies for breakfast”. My response was uh I do not have cookies and no you can not have them for breakfast. Then I started to think that I didn’t even have anything in my cabinets to make cookies. So later we made a trip to the store and as we were sitting at a light my 4 yr old notices all the Christmas decorations around the town. I started to think about the cookies and wondering exactly when I was planning to jump on the Christmas bandwagon? What was I waiting for? Now enters the White Chocolate Chip gingerbread flavored cookies!
White Chocolate Chip Gingerbread Cookies
Yield: 3 Dozen cookies
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes
If you like the flavor of gingerbread then you will like these cookies.
1 1/2 sticks unsalted butter room temperature
1 cup brown sugar
1 tsp vanilla
2 1/4 cup all purpose flour
1/2 tsp salt
1 tsp baking soda
1/2 tsp ginger
3.5 oz gingerbread flavored milk chocolate bar
1/2 cup white chocolate chips
1.Preheat oven 350. Prepare baking sheets.
2.Mix in small separate bowl flour, salt, baking soda ginger. Set aside.
3.Beat butter and sugar.
4.Add eggs one at a time.
6.Slowly add in flour mixture till all is incorporated.
7.Stir in chocolates.
8.Drop cookies by round tablespoons onto baking sheets.
9.Bake for 10 minutes.
So for my daughter’s birthday this year she asked for this particular cupcake. I really had a lot of fun making them. It was only the second time I actually stuffed anything inside of a cupcake. Quite a unique experience and oh so worth it. Snickers is a great candy bar for those of you who love caramel and peanuts. Which I do! Enjoy!

Delicious chocolate cupcakes stuffed with Snickers.
For the cake:
1 box of devils food cake mix
1 cup water
1/3 cup oil
1 bag of frozen mini Snickers unwrapped
For the icing:
4 oz of cream cheese at room temperature
1 stick of unsalted butter at room temperature
1 cup of powdered sugar
1 tsp of vanilla extract
1/4 cup of caramel topping, more if you would like to drizzle
1/2 to 1 cup of milk
For the cake:
1. Preheat the oven to 350°F. Line (2) 12 cup muffin tins.
2. Mix cake mix, eggs, water and oil together.
3. Divide mix into prepared muffin tins.
4. Place two frozen snickers into the center of each cupcake.
5. Bake for 20-22 minutes, or until an inserted toothpick comes out clean.
Try not to insert into the snickers bar.
6. Cool completely.
For the icing:
1.Cream together butter and cream cheese.
2. Slowly add powdered sugar.
3. Add caramel and vanilla.
4. Add milk until you reach the right consistency for piping or spreading.
5. Taste. If you would like a more intense caramel flavoring add more.
6. Pipe the cooled cupcakes with frosting
7. Enjoy! These may be garnished with more snickers and caramel.
A couple of notes:
I added two snickers because the first time I made these with one,
I did not get a strong snickers flavor.
I wanted it to be very prominent.So I added another.
Also we in our house do not like an overly sweet frosting.
So I added the cream cheese.
This can be omitted and increase your butter and powdered sugar.
Why the bitter side of sweet? Because sometimes life can be bitter but add a cupcake (cookie, brownie, or whatever you prefer) or two or three and life can be sweet. Very sweet! So come join me as I bake and cook my way to the sweet side! Thanks for stopping by!
